What are the "two powerful odor blockers" the description says these possess? Are they added scents of some type?

I believe the "odor blockers" is some kind of a specialized layer they added to the insoles. There's no added scents on these insoles.

I don't see a size option. (How can these possibly be one-size fits all?)

You have to trim them to size. It’s fine for my Women’s size 8 and my foot is narrow. I trimmed it all around to fit my shoes.

Why do these have a Proposition 65 Warning?

Proposition 65 requires businesses to provide warnings to Californians about significant exposures to chemicals that cause cancer, birth defects or other reproductive harm. ... The official name of Proposition 65 is the Safe Drinking Water and Toxic Enforcement Act of 1986. But this item most likely contains plastic that isn't BPA resistant.
