Do you have to press and hold the power switch, or is it like a switch where you can press once and it stays on, press again it turns off?

You do not need to press and hold while operating. You press to turn on and it will stay on until you press again to turn off. There is no auto shut off.

Specifically I am looking for an appliance with burr to grind spices such as lemongrass, hard galangal, cinnamon bark? I don't want a coffee grinder.

It is only recommended to be used with coffee.

what kind of burrs? conical or disk?

Gentle, “low heat” helical (adjustable) stainless steel burrs are seated beneath the clear grinding chamber, allowing you to view a spinning paddle move the whole beans into the hopper during operation. Brim does not recommend this unit for grinding herbs, spices, seed pastes, or anything moist, gummy or extremely hard, such as whole nutmeg, candied ginger, chocolate, etc. The 9 variable grind settings are: 1-2 (Fine); 3-7 (Drip/Medium); 8-9 (Course). There are no user serviceable parts, according to the manual.
