Would this flavor be good in coffee? I used to buy a coffee drink at a gas station and it was unicorn flavored. I hope this could be used for that?

yes this syrup can be used in coffee, it's pretty good. i've found it extremely good in ice water though.

Does it have sorbitol or xylitol etc??

No sorbitol or xylitol. The Naturally Sweetened Skinny Syrup line is made with stevia, monk fruit, and erythritol and contains no artificial flavors or sweeteners. They also have zero calories and zero sugar. Ingredients are water, salt, sucralose, cellulose gum, natural flavor, caramel color, lactic acid, acesulfame potassium, sodium benzoate and potassium sorbate (preservatives).
