I have a corner-mount sink, so cabinet sides are not parallel to sink sides. 1) Will this product work? 2) No studs, just cabinet. Will it hold?

I bought the product. My installer refused to use it. I kept it in case I ever have to install a sink myself. From what I recall, it's meant to screw into the cabinet. I don't recall studs being mentioned. I don't think the sides have to be parallel.

Will this work for an off set sink? One bowl is deeper than the other.

I think it works perfect for any sink because of enough length of wire.

Is this a permanently installed harness? I was under the impression that it was meant to secure the sink to the counter top only while adhesive cured.

This is a permanent harness - it is to be used in conjunction with the adhesive, to help hold the weight of a sink filled with water and dishes and prevent adhesive failure (which can leave you with a big, wet mess).
