You'll never guess these are gluten-free!
A friend of mine mentioned she had tried (and loved) this Birch Binder Paleo Pancake & Waffle mix so even though it is expensive - I am gluten-free and I get it... you simply cannot compare to gluten versions... but still... typical wheat-based pancake mix can be had for 7¢ an ounce! Anyway... I decided to give it a try. I bought in May 2020, stuck the bag into the cupboard and kind of forgot it until a few months later bought a pink Dash Mini 4" Waffle Maker and remembered the mix. Recommended Recipe Tried the recipe as recommended on the package a few times, it's super simple, you just add water if you are making pancakes. If making waffles it is recommended to add a small amount of fat - they like coconut oil. The waffles were amazing. There is a slight sweet taste due to the Monkfruit (last ingredient), which is tolerable when having these drizzled with butter and scrambled eggs on the side. Just two of these 4" waffles are filling and satisfying (that surprises me and makes me happy all at once). By the way, even though I had the mix probably six months before opening it is fresh and delicious. Keto vs. Paleo Full disclosure, I have not tried the Keto version yet. I'd prefer less carbs, but the Keto version (10 grams carbs per serving) is currently 65¢/ounce whereas the Paleo (16 grams carbs per serving) is 41¢/ounce. After thinking about it, I decided paying less was worth a few more carbs. I see that the Keto version doesn't contain the Monkfruit so I might like the Keto version better. The Paleo version has Cassava starch, Coconut Flour and Almond Flour, while the Keto version has Almond Flour, Cassava starch and Tigernut Flour. Buttermilk Waffle Recipe Paleo omits dairy... so if you are strict Paleo you won't be able to try this. My husband (the bargain shopper) bought three half-gallons of buttermilk because they were marked down to just 50 cents. When I used to eat gluten, buttermilk pancakes were a huge favorite so I thought I'd try the Birch Binders mix with buttermilk. The recipe is equal parts of the Paleo pancake mix, and buttermilk. so for one serving (two waffles) 1/4 cup mix and 1/4 cup buttermilk. Mix together and it forms a thick batter. You might need to add a tablespoon (or more) of buttermilk to thin it out a bit. The Dash mini-waffle maker is non-stick surface but I still brush the surface with coconut oil or butter. I snapped a photo of the batter after I plopped it onto the waffle iron before closing it so you can see it is pretty thick. Ohhhhhh... what a wonderfully delicious waffle this makes. If you can have dairy products, you should definitely try it. It has been a really special treat. So fast! I plug in the waffle iron and while it's heating up, mix up the batter. I usually wait until the waffle maker light goes off, and steam rising reduces significantly to check and see if the waffle is done. In between checking the waffle iron I'm scrambling the eggs so everything is ready to eat in minutes. I have the three flours on hand so maybe will try putting together a DYI version but in the meantime I have been having these with scrambled eggs (and grated mild cheddar) several times a week (see picture). Really delicious and fills me up for several hours. I would definitely recommend Birch Benders Paleo Pancake and Waffle mix, especially if you are the only person you're making food for, the small bag (12 ounces) makes 10 servings (20 pancakes or waffles) so the bag could easily last a month or two depending on how often you get a craving.

Skeptical, but convinced. AMAZING!!!
I've been on a keto diet for the last 2 months. In these last 2 months, I've learned that there is hardly anything out there that exactly replaces the comfort foods that you have been used to eating your entire life. I saw this mix on Amazon and it was only a few dollars, so I really didn't have anything to lose from at least trying it. One night, I was looking for something healthy to eat as a dessert and I remembered I had ordered this. It was so simple to mix up... Only needing the mix and water, which I replaced with low cal almond milk to hopefully make whatever this turned out to be a bit richer. I mixed it and let it sit for a few minutes to thicken, as the instructions recommended. Now... please understand, I love batter... cake batter, brownie batter, pancake batter. I crave it!!! I tasted the batter... Yuk, it definitely did not taste like regular pancake batter. It was sickeningly sweet and had grainy bits that were reminiscent of small bits of almond or coconut. Though I was becoming increasingly disappointed, I went through with cooking them. I noticed that they don't bubble on one side, like regular pancakes do. You have to make sure you flip them when they are browned. When they were done, I poured a small amount of sugar free syrup over them... still skeptical, but hoping for that comfort food feeling that pancakes can bring. I took that first bite.... A-MAZ-ING!!! They tasted nothing like the batter. They were fluffy and satisfying... They were slightly crunchy on the outside and spongy on the inside. The cooked pancakes had just the right amount of sweetness. This was it... That was what I was looking for. I am one happy customer. Thank you Birch Benders!!! I will be buying these again!!!

Overpoweringly sweet with a very strong coconut like flavor ( see review)!
It was a lot less than I anticipated receiving for the price ( small bag), the serving sizes were quite small however. I would recommend flavoring with something whether it be natural ( it was alright with fresh blueberries) or sugar-free syrup or agave or whatever you like ( because the taste needs help !) because the texture is okay ( a bit grainy) but the taste is unusual ( super sweet coconut like taste but not in a good way it ( I love coconut usually!) and was overpowering to the point they did not taste like a pancake at all. I’ve made my own paleo pancakes with coconut flour, stevia etc. before and they had a fairly strong taste from it ( but less sweet and that was good... because I apparently didn’t use as much Stevia as they do ) and I was hoping these would be different /better than my DIY paleo ones. They were not, but were faster to make ( obviously).

Best Pancake
Love this. Tastes the way i like it. Birch Benders has other flavors and they are great too. Easy to make pancakes - just add water. Using a bit of butter for frying pancakes. Has about 5 gms of protein - good enough for me since pancakes are paired with maple flavored sausage, scrambled eggs and tea with lemon. About 3 pancakes - good enough to sustain me.

Perfect grain free, oil free, sugar free pancake and TASTY
First thing I like about this product is that it is GRAIN FREE and I eat no grain. I take these silver dollar sized pancakes to IHOP or the diner and have them with my eggs instead of toast. Second thing I like about this product is that there is not even a hit of milk in it. I am dairy free...eggs are not dairy. Third thing I like about this product is that it is easy to use. If you are looking for something to taste like bread or wheat based pancakes or waffles, then use wheat flour. I make mine with Cashew milk, again..not dairy, instead of water. I get my griddle searing hot and then reduce the setting to just under medium. I do NOT spray the griddle or put butter on it. Then I put 8 small pancakes on the griddle and let them cook....a couple of minutes per side. They do not cook up like regular pancakes, you know the little bubbles. I flip them and after a minute I squash them down because I like my pancakes squashed down. You don't have to do that. When they are done, I either serve them with Almond butter or cashew butter or I freeze them. This product is a good and tasty product. If I could change one thing, it would only have almond flour and monk fruit in it, but since I can no longer find that product, I am using the Birch Benders pancake and Waffle Mix. I just ordered 4 more.

Favorite Pancake EVER!
This mix was such a great find! I picked it up when I needed to make breakfast for a gluten-free friend. I figured I make these for her, and make the rest of us traditional pancakes packed full of gluten and deliciousness. I mixed up a batch of the Birch Benders, was turned off by the slightly foamy texture, heated up and buttered my grill and by the time I turned back the BB mix had thickened up quite a bit. It was super easy to handle, poured well and created perfect pancakes that were easy to flip and cook. I wasn't sure how to tell when they were done, so I pulled them off when they were slightly browned, took a bite to see if it had cooked through. PANCAKE HEAVEN. I loved the texture, the thickness, the unique flavor. We ate the entire batch, and I added the pancake mix to my subscribe and save that day. These are the only pancakes I ever make now and we have them a few times a week. They're also fantastic for camping. Pre-portion the mix into bowls with a lid, then add water and mix at the campsite. They're much more forgiving and easier to cook than traditional pancakes, which makes them perfect for picky camp stoves.

Good pancakes if you substitute and add other ingredients to the mix
I have been doing Keto for the last two months and was looking to add some “Keto approved” pancakes to my diet. I read some of the reviews and found out that some people were using this product as “Keto approved” by replacing some ingredients. So I decided to buy it, even though I knew that the carb count was high for Keto. As other recommended, I replaced the water for almond milk and added an egg. I also, added some blueberries, and a little bit of vanilla extract, cinnamon, nutmeg and pumpkin spices, hoping to get a more flavorful product. I fried them in coconut oil and they did not stick at all. I tried the pancakes with sugar free syrup and they were pretty tasty and very close in flavor and density to the real thing, but this could be because of the substitutions and additional ingredients. The only thing is that they were very rich for me, maybe because, again of the substitutions and additional ingredients, that I could not finish the serving size of two pancakes. Also, I felt a little bloated and with a little stomach discomfort right after eating them. This could be probably due to the fact that they are not 100% Keto, especially because of the Yuca (Cassava) starch, which is like a potato and we know that potatoes are not Keto approved. Overall, I think this is a great product if you make it more Keto approved with the additional ingredients.

糖尿病で、基本炭水化物があまり取れないのですが大のパンケーキ好き。自分でアーモンドプードルなどで配合して作っていました。このモチモチ感は出せなかったので、満足です。塩っ気もクリームチーズとジャムを付けて食べるのでちょうどいいですね。安くないですが、また頼みたいです。

Definitely on my top (low carb) list!
Very easy to prepare and pancakes turned out really fluffy. Cooked them on one side till they bubbled before flipping them over for a minute. The batter spreads out as it cooked so a full pack (plus 2 & 3/4 cups of water) yielded me about 10x 4”-5” pancakes. I’ve tried other (low carb) pancake recipes, they worked but this ones gonna save me a lot of time now.

グルテンフリーでしかもお水だけで作れるというのにひかれ購入してみました。 ややクリーム色がかったきめの粗めな粉で、お水と混ぜても少しザラザラ感があります。 普通の小麦粉のミックスに比べ焼き色はあまり濃くはならない気がしました。 食べてみるとナッツ類の粉の食感なのかシャクシャクした歯触り。 一般的なパンケーキとは別物です。 甘み少なめ、というか正直かなりしょっぱく感じました。たまたまかなと思い粉をよく混ぜたり、日を置いて何度か作ってみましたが、やはり塩気がかなり強いです。 材料的にはグルテンフリーだしヘルシーで良いかなと思いますが、私にはあまりにしょっぱくて星3つです。
