Is it suitable for the elderly?

I would say yes but if there are severe tremors due to age or a medical condition I would go with a different product. They are sharp and have a fairly pointed end. Amazing product otherwise!

Can you cut with these both ways, like flip them around and switch from concave to convex curvature? I am looking for a convex curvature

To a certain extent, yes......remember that reversing it does not give you a flush cut.......you will have a bit of clearance due to the fact that these were designed for close cuts in the concave view......
