How do you rehydrate?

Instructions: 1 lb of dehydrated potato slices = approx 4 lb of fresh potatoes. Cover potatoes with water and let stand for 15-30 minutes, or simmer until tender. Salt as desired. Use in scalloped potatoes, fried potatoes, potato salad, soups and stews. Shelf Life: Best when stored in a cool dry place at temperatures between 55 and 70 degrees F (ideal humidity 15%). Shelf life estimates are based on industry studies from sources deemed reputable. Since Augason Farms has no control over individual storage practices, they must disclaim any liability or warranty for particular results. Sealed: to 25 years. Opened: to 1 year.

Do you use the chemical sulfite to dehydrate your pototoes?

Sulfites help preserve the product and retain its color. You need to look at the ingredient list for foods from any company.  The 3rd image of the product shows the ingredients: Potato slices (freshness preserved with sodium bisulfite). I too am sulfite sensitive, but decided small portions for me on non-consecutive days, and having food for the rest of my family was more important. It's rumored taking B-12 may reduce or eliminate a reaction. Almost all dried potatoes on the market have sulfites. I buy Honest Earth mashed potatoes and rotate my stock to always have a boxful on hand in addition to these potato slices. Sulfites are also on the apples used in Augason's hot cereal, so I stuck with plain for breakfast.
