Would this be too young for a 7yo boy?

My 7yo loves it as he can put it together himself without help. It has worked very well as a present for both my 7 and 3yr olds as they both get different enjoyment from it.

Can the sound be turned off?

No, you can only use the magnetic. Look on nilamoon channel on YouTube you’ll see

Does this fall apart easily? I’ve had a few other sets that literally fall apart with the slightest touch

No, once clipped togetehr it's fine and it's easy to join to other sets in the series to make bigger runs
