Not sure, I am using this product in a set of lab experiments. But I think it is commonly used in bake goods as a preservative. As long as it is food grade should be okay.

Would this work in bread pudding?

most common preservatives are 1) propionate, 2) Sorbate, 3) Benzoate. the pH of your product will influence the choice. most pudding uses either sodium benzoate or potassium sorbate , either by itself or the combination of both.
