Question 1

has anyone tried using these to lift the insert rack from the instant pot?  I was cooking rice PIP and used two tongs, and it was scary.

Yes, I just used them yesterday to lift a whole chicken out.  Before you lift, place these on the handles of the rack so that the rack is balanced.  Use the part with the rubber and hold on really tight when you lift or ideally, use the metal ring to lock these handles tight.  Works great!  My husband showed me how to lift the inner pot, by rolling the clamp of these over the lip of the pot, so that the rubber part of these makes contact with the sides of the pot itself.  Clamp them tightly or use the metal ring to lock the handles.

Are these helpful when removing pots from inside the air fryer?

Yes, they are quite handy at getting a bowl/pot out of an air fryer. Be sure to use both grippers on the bowl to prevent accidents. I also use mine to pull my oven rack out some to get a hot dish out of the oven, I use mitts only to lift a hot dish out of the oven though.

So , whats wrong with Pot Holders like your Momma used (uses)?

While pot holders work in most instances, these provide a better grip and don't accidentally end up with a corner in the food. I thought the same thing until I used them and now I would never want to go back to pot holders. We gave a pair to my mother. She is handicapped and has difficulty griping bowls when removing them from her microwave. She has dropped more then a few bowls of hot soup and fortunately was not burned. She is able to use these much better.

Are these easy to squeeze?

Fairly easy, one at a time.  While squeezing, flip down the little metal loop (it hangs down from the upper handle) so that it goes around the lower handle and keeps the upper & lower together.  To release a gripper, squeeze again, flip the metal loop back up, and  let go.
