can you smoke cheese on this smoker?

Absolutely can smoke cheese in this using the side box for heat. Put the cheese on parchment in the smoke shadow (which is the space under the smoke pipe). I have done Gouda and Muenster with great results.

Can you use pellets in the smoker side?

Haven't tried that yet but I'm for sure you can
