Can you add sundries tomatoes I am using the mushroom risotto

Yes, you can use sun dried tomatoes in this dish and any of the Alessi Risotto selections. I not only use the sundried tomatoes in preparing the package, I will also include other add-ons such as a tablespoon or two of capers, fresh garlic, your favorite chopped mushrooms, a wedge of onion chopped, or anything that you can imagine that you might be served in your favorite restaurant. I have had this dish prepared "as is" with success, but I like it best with add ins and sundried tomatoes are my favorite add on. You can add as little or as much as you like. This is a good product and they have other risotto's (one that includes sundried tomatoes) that are just as good. I even add additional sundried tomatoes to the sundried risotto. Instead of the butter can you use oilve oil in the cooking process?

As stated in cooking instructions,the initial addition of butter is optional. It should still taste quite good without it.

when adding the butter to the pan with the rice should the butter be cold or room temperature?

It doesn’t matter. The heat will melt the butter fast enough and won’t make a difference in the final product. Just one thing. Don’t expect it to turn out like the risotto at your restaurant. It’s tasty but is more like pilaf than risotto.
