Are the covers sturdy enough to use the notebook without a desk/table?

Yes, there is a hard substrate inside the cover that is likely plastic or rigid cardboard. You can use it without a table (on your lap, etc.).

Can you fold the left side underneath the right side for use?

Yes, you can. I've got mine set up so each notebook cover is tucked into case cover, which I like, but makes it a little impractical to fold the left side under. But if you have it set up like it's shown in the picture, the case/cover is flexible enough for you to do that if you wanted.

will this cover fit the Rocketbook Wave?

It will if you have the executive size not the full letter size.

Will this work with plum planner?

If the dimensions for plum planner are identical to the Rocketbook Everlast Executive AND the plum planner IS NOT bound at the top (Short Edge) then this cover should work. I’m happy with mine.
