Why does this say non-gmo? it's just a salt. might as well add "gluten free" or "blessed by unicorns".

I won't speculate on this manufacturer's basis for the non-GMO claim, but citric acid (an ingredient in sodium citrate) can be (and sometimes is) made using genetically modified organisms. Example 1: the citrus plants (e.g., lemon trees) from which the acid is extracted might be GMO. Example 2: Either or both the fungus (e.g., aspergillus niger) and/or the molasses used to produce citric acid via the fermentation method could be GMO. Typically these are industrial scale processes, so frankly I would be shocked if the organisms employed are NOT optimized by genetic modification.

Is this trisodium citrate (E331 iii) or monosodium citrate (E331 i)? Is it anhydrous or the hydrate?

The description of this item states: Sodium Citrate (E331). Sodium Citrate most commonly appears as the salt trisodiumcitrate and can be used as an emulsifier, calcium sequestrant, acidity regulator, and preservative. In molecular gastronomysodium citrate is widely used in spherification to regulate acidity and reduce calcium content to prevent early gelation.

I see that this PACKAGED in the USA. Can you tell me where the product is originally made?

it doesn't say... its marketed and distributed by spicy world usa out of houston, tx.
